Mung Bean Brownies (vegan, gluten free, refined sugar free)

DSC01510Inspiration: Black Bean Brownies Recipe from Happy Herbivore, and two very good friends who fed me brownies with this secret ingredient.

Adjectives: squishy (?), chocolate-y, gooey, energizing, soft, raw-tasting

Ingredients 
2 cups mung bean, cooked
2 whole bananas
⅓ cup agave nectar
¼ cup unsweetened cocoa powder
1 tbsp cinnamon
1 tsp vanilla extract
¼ cup raw sugar (optional)
¼ cup instant oats
1/3 cup chopped walnuts (optional)
1/3 cup chocolate chips

  1. Preheat oven to 350 F. Grease an 8×8″ pan or line it with parchment paper and set aside.
  2. Combine all ingredients, except oats, in a food processor or blender and blend until smooth, scrapping sides as needed. (I used my Vitamix)
  3. Stir in the oats and other mix-ins such as nuts and chocolate chips and pour batter into the pan.
  4. Bake approximately 30 minutes or until a toothpick inserted in the center comes out clean. Allow to cool before slicing.
